Hi All! This month's flavors are still summery, but moving into the warm & cozy spices and fruits of fall.

Italian Soda

A light and refreshing blend of organic blood orange and sage (fresh-dried from the farm).

This is a BBK recipe and sits for 5 days before bottling for your drinking enjoyment. I've been playing around with the amount of sage used, so please let me know what you think. Can you taste it?

Blue Bahmb

Back again, because when isn't blueberry, vanilla and cinnamon w/a touch of lemon zest not a good idea?? You all seem to love it, and so do we. We're up to producing 5 gallons a month now and will keep going just as long as you're enjoying it.

Raspberry Mint

These raspberries (flash-frozen from the farm) just don't stop giving with their fresh flavor and tangy punch. The peppermint is still going strong and providing a refreshing pick-me-up to the blend. As usual, all of the flavors are infused with fresh ginger, so there's a little bit of a spicy kick when all three flavors meet on the tastebuds.

Kapha Ayurvedic Blend

Moving into fall with a little Ayurvedic support. The herbs in the Kapha blend support immunity, promote growth, and moisturizes the skin. "Water is the dominant Kapha element and when in balance is expressed as love and forgiveness." (BBK)

Ingredients includes: Fresh ginger, whole clove, cinnamon, peppermint, cardamom, allspice, and orange zest.

A couple of combos I like:

  • Blueberry & Kapha - great in the morning for an overall immunity boost and antioxidant infusion.

  • Fresh orange slices or pineapple in the Italian Soda - it's a delightful flavor by itself, but the added fresh fruit just amps it all up a notch.

Your feedback is always welcome. I'm particularly interested in how the flavors taste from your perspective. As always, the pH of the F1 (first draw) is typically between 3.0 and 3.2. I've been pulling them right around 3.1 the last couple of times, so you may have noticed a little more tang to the flavors. I'm also curious about whether you can taste the herbs in conjunction with the fruits used. How do they meld together? Do any clash for you? The T&D from last month is a good example of how flavors complement each other and blend into a delightful beverage, for me (plus, I really like the beery-ness of this blend). And, if you refrigerate yours, let me know: I have a couple of questions to ask you about how it holds up.
